Cuts of steak.....

What are you asking? How to cook it? Is the description accurate of where it comes from? Just make sure you get prime cut at minimum for quality beef.

I think a good strip is tough to beat. If it’s thick (~1.75”), cooking in the oven at a low temp first is my favorite way to do it. Get it to ~128 and then sear it on high heat for about 2 minutes total. Let rest for 5-10 minutes. Salt, pepper, garlic, oil.

Flip it in the oven after 20 minutes or so and dab it with butter fairly generously. Should give it a nice dark color and red throughout.

I have never heard of the Hanger and Denver cuts. I smoke Tri Tips a lot and they are always great.
