okay world travelers- thinking of taking the wife to Dubrovnik this summer for our anniversary. Any opinions or advice? Things to do? Things not to do?

Haven’t been....but it and Malta are on my “to do list” soon.
 
Malta is amazing. Was there about 7 years ago. Not sure if we will spend all of our time in Dubrovnik or try to also go to Hvar and or Korcula. May try to spend a few nights in Venice as well. I've never been to Croatia so not sure how to plan this one

I’m especially interested in Malta ever since I did some background inv into my Mom’s family name. We assumed because it was “family lore” that they came over from Germany in the early 1800s mainly because they lived in a German part of North Carolina and had a German sounding name. But doing the family history we found out that they were part of the Knights of Malta/Knights Hospitaller/Order of St John that had stayed behind in Malta to fight pirates and Islamic invasion until 1798 when they were booted from Malta by Napoleon and went to England for a couple of decades before ultimately moving to America.

So rather than Germans fleeing the many little wars in what is modern Germany in the early 1800s like we thought, my maternal side were a long list of Knights Hospitaller booted from Malta and forced into England before moving to the US. Since I learned that a couple of years ago, I’ve been wanting to go. I assume that’s where genetically I got most if not all of the “Jewish” blood that showed up in a genetic test (as the Knights Hospitaller frequently took local Jewish and Christian women while in Acre and other Crusader cities before falling back to Malta).
 
Dubrovnik and the surrounding countryside are delightful, but Venice is one of those truly unique places that you've got to see at least once. An Adriatic cruise would allow you to visit these two places and several other gorgeous spots along the coast.

Been there a few times, however it's been a few years. Good food, nice people, amazing little city.

Basically did this exact trip last year. Flew in to Split, stayed 2 nights, took the boat to Hvar for 2 nights, boat to Dubrovnik for 2 nights, and then flew to Venice.

Dubrovnik is obscenely touristy but a beautiful city. The beaches are rocky as hell though. Def do a kayaking outting, great way to see the walls of the old town. Also on top of the mountain there's a good view point and museum of the war.

Hvar was a great time, we partied our asses off, go to Hula Hula for some daypartying, also be sure to rent a boat, there are lots of little islands and beaches you can get out to. The old town has some good restaurants, the better ones require reservations in advance so tackle that before heading there.

Split is skippable - we just used it for the airport and went to the first night of Ultra.

Our ferry boat stopped in Korkula, looked cool, wish I'd stayed there for a day or two as it looked much less (though still quite) toursity than Dub.

If you go to Dubrovnik, you should definitely stop by Albania.
Albania, Albania.......You border on the Adriatic

We stayed in Airbnb's in all three places.
Worked out great, close proximity to the main squares and old city (like 5 min walk).

In Hvar you can rent boats with captain or without. We rented one with a captain bc we were gonna be drinking and jumping off the boat to swim and didn't want the damn thing floating away on us bc we are amateurs who prob don't know how to drop an anchor properly.
Our Airbnb host's dad had a boat and captained it for us.
Small boats are pretty cheap -- $100-150 for the whole day. It is a must do.

Whatever you do, avoid it during summer months...hot and crowded...Hvar is great, Korcula very nice as well....don’t bother going south to Montenegro, if time permits, head to Slovenia....
 
Btw for restaurants in Hvar and Dub, here is what was recommended to us. Thanks to a healthy amount of daypartying I was too drunk for most of the meals to really appreciate the food in Hvar.

I'd suggest reservations (made at least several weeks in advance) at all of them:

Hvar
Passarola - nice place but kind of bland
Dalmatino - highly recommended but I was blacked out so who knows how it was.

Dubrovnik

Taj Mahal (Bosnian food - odd name choice obviously) - there are two Taj Mahals, go to the one on Nikole Gucetica 2.
Panorama - on top of the hill. We didn't eat there but did grab a drink and enjoy the view. Seemed fancy n stuff.
