Aaron Franklin was on Jimmy Kimmel tonight promoting his new cook book. He said every recipe he knows with every secret to cooking his BBQ is in it. I couldn't resist, ordered it off Amazon. I also bought a new smoker to go along with it.

Same smoker I have. I plan on getting the cold smoker attachment that dmm posted a couple weeks back. As it is you can get the great smoke flavor and I've never had any complaints in 3yrs but I'd like to try and get more bark like on my firebox smoker.

And I saw Franklin on Kimmel and want the book.

It's going to make a sweet mothers day gift for my wife!

Should be here this weekend, can't wait to try out. I've never cooked brisket, can't wait to see how it goes. Franklin made it look pretty damn easy.
 
I've been employing his method of smoking brisket for years now with simply amazing results.

Aaron is probably doing something right (see below), but, Austin being Austin, he'll probably have to close down when the city council pass the new regulations.

Well....to be fair, the proposal is in response to complaints from residents in the neighborhood. He is nestled right in the middle of a bunch of houses over there on the south side. I think he added two or three new smokers in the last couple of years.

Hopefully they find a compromise.

kind of an over kill for sure. I thought scrubbers were meant for paper mills and refineries......but bbq restaurants, really???

Of course if would be the granola chewing people of Austin making this an issue.

Given where it's located, I can understand that but people in Austin get outraged if a tree or bush gets cut down. I just find it funny because the level of regulation and oversight in Austin can be classified as "overreaching".
