What do you use as an alternative to foil for steaming veggies/potatoes? I got spooked after reading articles about aluminum leeching into the food.. so far a stainless steal grilling pan with lid is what I’m coming up with?

Have you thought about just steaming them on the burner or inside on the stove in a pot?
 
I use a cast iron skillet for veggies in my kamado.

I kept an iron skillet in the drawer for many years until recent when I started reverse searing steaks. There is something about cooking with iron that is different. Now I find myself using it more often and wouldn't be surprised if the veggies turn out great cooking this way too.

Love cast iron for outdoor cooking on my KJ big Joe. I have two fajita skillets, one big skillet, a large pot and the KJ half moon skillet. The fajitas skillets are great for fajitas but also for searing ahi tuna and filets. The large skillet I have is reserved for veggies, mostly used for broccolini, brussel sprouts and the like. The veggies turn out great in cast iron. The large pot is for carnitas and the large skillet is for big cooks like fajita veggies or gyros.

Grow some thyme and cut off a bunch, wet it and cover your veg...
