All the nieces, nephews, cousins having a text debate over fish sticks or tuna casserole or just going to the Knights of Columbus fish fry at the Parish Hall…my kids included.
I guess it’s a good thing to see them being observant Catholics during Lent. 😇🙏
Meanwhile their old fart parents are all meeting up for fried shrimp and collard greens at our favorite dive bar/grill to kick off a busy family weekend.

None sounds healthy to me, except the tuna casserole.

So many good ways of cooking fish without frying.

Take filets, brush with olive oil.
Chop peppers and onions.
Coat filets with panko, bake at 500 for 10-15 minutes.

Good healthy fish. I’ve done it with a number of different kinds of fish.

Serve with fresh lemon.

When I lived on a sailboat or near the marina in the Keys, we used a similar recipe.

Brush with Olive Oil; add peppers and onions. Squeeze lemon juice on.
Wrap in tin foil and put on the grill. Mmmmmm...........brings me back to those days................oh, the best part was that it was my job to go spear the fish for dinner!

The restaurant had very fresh mackerel so I went with that.
Their grilled shrimp over a big Greek salad is actually my favorite.
If I’m doing fish at home it’s going in the oven using the same baking method.
