I walked a long way and I tried to get off this rock. I went as far as I could go on foot. I'm now as far as I can possibly be from the center of the earth while still standing on it.

What country am I in?

Initially thought Mt Everest, then I thought, that's too easy.
That would have been the obvious, but wrong answer. Ostrich nailed it though. Everest is the highest peak above sea level, but Chimborazo’s peak is further from the earth’s center due to its proximity to the equator.

Not that it matters, but I built in a hint. I could walk to Equador from Florida, but not to the Himalayas

On the moon. If you were on the moon facing the Earth (and not close to the poles), the Earth would remain stationary in the sky and light up in 24 hour cycles. You’d get to see the sun for two weeks at a time, followed by two weeks of darkness.
