All the nieces, nephews, cousins having a text debate over fish sticks or tuna casserole or just going to the Knights of Columbus fish fry at the Parish Hall…my kids included.
I guess it’s a good thing to see them being observant Catholics during Lent. 😇🙏
Meanwhile their old fart parents are all meeting up for fried shrimp and collard greens at our favorite dive bar/grill to kick off a busy family weekend.

None sounds healthy to me, except the tuna casserole.

So many good ways of cooking fish without frying.

Take filets, brush with olive oil.
Chop peppers and onions.
Coat filets with panko, bake at 500 for 10-15 minutes.

Good healthy fish. I’ve done it with a number of different kinds of fish.

Serve with fresh lemon.

When I lived on a sailboat or near the marina in the Keys, we used a similar recipe.

Brush with Olive Oil; add peppers and onions. Squeeze lemon juice on.
Wrap in tin foil and put on the grill. Mmmmmm...........brings me back to those days................oh, the best part was that it was my job to go spear the fish for dinner!

The restaurant had very fresh mackerel so I went with that.
Their grilled shrimp over a big Greek salad is actually my favorite.
If I’m doing fish at home it’s going in the oven using the same baking method.

My mother used to make killer tuna and noodles. Not sure what her secret was but I could really put that stuff away…
I loved tuna casserole growing up. The secret back then was Ruffles, either original or cheddar and sour cream, layered on top. I haven't had it in a really long time, but now I feel like I might want to make it. I recently made a pear cheese salad to satisfy a nostalgia craving and really enjoyed it.

It may be a difference in sophistication rather than age, as my mother's recipe for tuna casserole was actually her mother's, handwritten on a little notecard, and probably dates back to the early 60s. One of my grandmother's hobbies was developing recipes that used only ingredients that were available in the food assistance boxes that her church put together and distributed. Some of the recipes were really clever, like her orange jello salad recipe that mimicked a traditional sour orange pie, and some were more like jailhouse concoctions made with stuff that can be bought through the commissary. All packed a lot of flavor and calories and required minimal resources.
 
My brother is five years older, but he told me that my mother had mastered the art of Spam, made all kinds of ways. I don’t remember Spam.
Spam, Vienna sausages, canned ham....... you name the canned meat product and we ate it. And I'm amazed to this day at how far my mother could stretch any of them or 1 lb of hamburger to feed a family of 5

Same for us. We ate more spam, devilled ham, dried beef, bologna, etc. than any other meat. That "1 lb of hamburger" is also an iconic memory. That was always on the weekly grocery list, and it got stretched into spaghetti sauce, chili, tacos, etc. over the course of the week.
