How do you like your bagels?

Lots of cream cheese...

I employ a "bagel guy". I text him my bagel preference each morning as I'm being suited by my valet. By the time I've consulted with my house steward and come downstairs, my desired bagel/topping combination is waiting for me.

Mostly I prefer cheddar and jalapeno, toasted, with some plain cream cheese.

I'll admit, I haven't been this confused in a while. I don't understand why someone would do that to a bagel. Is there a downside to cutting it in half that I've missed all these years? "You don't have to take the knife off the bagel, except to get more cream cheese" - yeah, kinda like how I do it now. Seems like it makes it unnecessarily complicated. All that moving the knife in a circle is how I'd end up cutting myself. The bagel guillotine is way better.
