Most authentic Mexican food in Tallahassee?

Raising Canes sauce is completely different than Guthrie’s.

You must be thinking of something different. Raising Cane’s is essentially a ripoff of Guthrie’s.

Raising Cane’s recipe is this

  • 1/2 cup mayonnaise
  • 1/4 cup ketchup
  • 1/2 teaspoon garlic salt
  • 1/4 teaspoon Worcestershire sauce
  • 1/2 teaspoon black pepper

And Guthrie’s is allegedly this

The Raising Canes recipe is allegedly from a former employee and is supposed to be 100% accurate. I’ve tried making the various Guthrie’s clones many times and it’s always close (like the restaurants that rip them off) but never exact. I would assume it’s the black slime mold and unwashed hands that give real Guthrie’s sauce that extra zing.

Well we lived in Vegas for a year, and we ate at Canes at least twice a week. Their chicken was great, and the sauce has a hell of a lot more pepper than Guthries, and I do not believe there is any worchestershire in Canes’ sauce.

Per the recipe I posted from the fired employee it has the same amount of Worcestershire it’s just missing the vinegar found in some (but not all) of the Guthrie’s clone recipes.

I moved away 11 years ago, and go back frequently - but have not tried this 'Taco Bus' I keep hearing about. Familiar with it?

Taco Bus is quite good; they now have a handful of locations scattered around the Tampa area. Food's very good, generous portion sizes, reasonable prices. The original is at the corner of Nebraska & Hillsborough, in Seminole Heights - so you might want to get it to go, or lay down on the ground while you chow down if eating there.
They did literally start out in an old school bus that had been converted to a kitchen. It's still there, but they now have a building with indoor seating in addition to the outdoor picnic tables.

Pretty sure Guthries sauce also contains MSG, or did when I dated a girl that worked at the former Timberlane location.

That could be the missing ingredient from the clone recipes (well that and the black slime mold).

Yeah, my mother lives in Seminole Heights. Makes me a bit nervous.

Thanks for the Taco Bus info. I'll check it out next time I'm in town.
